Abstract text: Horticultural crops serve as primary reservoirs for pectin, cellulose, and dietary fiber, though the concentration of these specific fractions is contingent upon species, cultivar, and physiological maturity. Encouraging the intake of fiber-reach plant matter and identifying novel sources of structural polysaccharides are critical objectives for both public health advocates and industry stakeholders focused on sustainable product innovation.
This study aimed to enhance nutritional literacy and promote the utilization of fruits and vegetables as functional raw materials. To achieve this, the pectin, cellulose, hemicellulose, lignin, and total fiber content of fifty distinct commodities sourced from the Polish market were quantified. The resulting dataset was integrated into FibreApp - a free mobile application designed to estimate these nutritional parameters via machine learning techniques. This tool bridges the gap between laboratory data and consumer application, facilitating informed dietary choices and supporting the development of health-oriented, sustainable food systems.
